hi my name is Liz beach lair and I'm a
registered dietitian and today I'm going
to show you how to make a low-carb
sugar-free cheesecake
first you're going to take three
packages of cream cheese and put it in a
bowl and blend together till it's nice
and fluffy once the cream cheese is nice
and fluffy take your spatula and make
sure you get all of the cream cheese off
the mixer and you're ready to add your
next wet ingredients next you're going
to blend together four eggs 2
tablespoons of lemon juice 2 tablespoons
of vanilla next is 1/4 a cup of low-fat
sour cream
and once again you're going to blend
till it's well it multiplied now that
the ingredients are well blended it's
ready for the sugar substitute and for
this one I'm using stevia baking blend
and it's 1 and 1/3 cups now you have
your cream cheese mixture ready to be
poured in a pan next we're going to set
it aside just for a minute or two while
we make the crust for the cheesecake I
really like this crust recipe because
that it only includes about three
ingredients it includes a cup of almond
meal a tablespoon of flax both of these
are high in poly and monounsaturated
fats and vitamin E and two tablespoons
of butter you're going to mix it in a
food processor till you get a dough like
texture should look like this and you're
going to press it in the bottom of your
springform pan once you have your dough
in the bottom of the pan you're ready to
pour your cheesecake mixture on top once
you have it poured and set in a
springform pan you just stick it in a
350 degree oven for about 60 minutes it
may take a little longer just depending
on the type of oven that you're using
but you just want to make sure that it's
nice and firm to the touch and has kind
of a golden brown color fitting you're
ready to serve I have here a prepped New
York cheesecake the low-carb variety I
did add some cherry puree on top I like
to add fruit on top of cheesecake
because it adds a serving this is a
great low carb dessert it's high in
protein with the almond it's high in
vitamins
an unsaturated fat it also has lots of
fiber in it so here we go one slice is
only five carbs and six grams of protein
